Sardines, Thyme & Lemon Recipe

This is a dish that is both humble and elegant, full of flavor, with the glistening silver skin of the sardines crisping in the heat.

RECIPE:
INGREDIENTS
8 Breco sardines cleaned and head on olive oil
2 whole heads of garlic
24 whole peppercorns
A handful of fresh thyme
2 whole lemons
2 whole red chillies
1 cup black olives
8 large wooden skewers
Coarse salt

METHOD:
Slice the heads of garlic across their middles
Drizzle with olive oil and bake for 25 minutes in a large shallow dish
Remove from the oven
Place the wooden skewer through the mouth of the sardine
Pack them into the same dish as the garlic was baked in
Add the peppercorns and strew with fresh thyme
Cut the lemons in half and squeeze the juice all over the sardines
Place the lemons cut side down in the dish salt the sardines, add the chillies and olives, drizzle with lots of olive oil
Bake at 200C for 8-10 minutes
Serve with the roasted garlic, a green salad and lots of crusty bread to soak up the juices You can also add a cup of cherry tomatoes
