Rich, creamy & cheesy. This is the macaroni and cheese that dreams are made of.

MAC N’ CHEESE

• 2 Cups Cherry Tomatoes
• 5 Tbsp. Butter
• 5 Tbsp. Plain Flour
• 500ml Milk
• ¼ tsp. Nutmeg
• 1 tsp. Salt
• ½ tsp. Black Pepper
• 1 tsp. Mustard
• 1 Cup Grated Cheddar Cheese
• 1 Packet Perfecto Macaroni
• 1 Cup Feta Cheese

1.Toss Cherry Tomatoes in olive oil, 1 tsp. Italian Herb and salt & pepper to taste. Roast for 20-30 minutes or until caramelized.
2.Meanwhile, melt 5 Tbsp. Butter, add 5 Tbsp. Plain Flour and cook for a couple of minutes. Whisk in 500ml Milk gradually, add ¼ tsp. Nutmeg, 1 tsp. Salt, ½ tsp. Black Pepper, 1 tsp. Mustard, and ½ Cup Grated Cheddar Cheese. Cook until thickened (stirring occasionally)
3.Prepare Macaroni as directed, strain and stir through the Cheese Sauce.
4.In a roasting pan put a layer of macaroni, add a layer of roasted cherry tomatoes, a layer of ½ Cup Feta Cheese, another layer of macaroni, top with ½ Feta Cheese & ½ Cup Cheddar Cheese and bake under a grill at 220C until golden brown.
